That program is made by TVB, which is one of only two public broadcast channels in Hong Kong. The other channel is ATV. Of course, there are pay to view cable channels in HK.
Here is a rough translation of the each segment

After a quick overview of the Wing Chun legend (how it came to be), the program shifts to an interview with a Karate guy named Vinz. Vinz was inspired to take up martial arts because of Bruce Lee, but his attitude towards traditional Chinese martial arts remains ambivalent because he feels a “useful” martial art must be proven in sparing and competition. Vinz travels to Macau to meet a Wing Chun master to experience the art first hand. This Wing Chun expert is of Yip Man’s lineage named Sifu Lui Ming Fai. (From the photo on the wall, Sifu Lui Ming Fai’s teacher is Ho Kam Ming). Sifu Lui has 30 years experience in Wing Chun and also took part in fighting matches in and outside the ring. Undefeated.
Sifu Lui moved eventually from Hong Kong to Macau. He feels that since he took up Buddhism, he can be even calmer in any fighting situation.
Sifu Lui feels Vinz will have a tough transition from Karate to Wing Chun because Karate is a hard style as opposed to Wing Chun’s softer approach. Vinz’s introduction to Wing Chun is to experience or learn the devastating power of Wing Chun’s straight line punch. After Sifu hits him several times on the pads, Vinz was impressed. Without the sparing pads, Vince believed he would have been “K.O”. While trying to teach Vince how to punch, Sifu Lui feels Vinz’s arms are still too tense. Sifu explains the reason why the wall bag “bounced” after each of his punch is because the power was properly “transferred” by a relaxed arm punch. Vinz’s knuckles are cut up and he thinks it is going to take him about 3 years at least to reach Sifu’s level in punching power.

Apparently, Vinz is an actor and a big fan of HK martial arts films. Thru a friend (Wing Chun Sifu Sin Kwok Lam), he was able to visit the movie set of director Herman Yau’s movie “The Legend is Born: Ip Man”. Sin Kwok Lam explains that many are skeptical of how effective is a small WC fighter against a bigger opponent. For example he is a 5 foot 7 inch guy (140 Lb) can defeat someone taller and weighs over 200 Lb? He explains that Wing Chun is a system that is based on the principle of using soft power to over come stronger forces. He tells the actress Rose to hit Vinz harder because Vinz is a trained Karateka. ( I guess they filmed this scene to illustrate his point). Vinz gives the expression “ what?? Are you kidding”?
To understand why Wing Chun made Bruce Lee so awesome as a fighter, Vinz agreed to undergo 3 weeks of Wing Chun training. Sifu Lui thinks after only a few days of training, Vinz made some improvements but still hard to predict how well Vinz will turn out since he already has a martial arts background. (I guess Sifu implies that Vinz is already “pre wired” to fight a certain way and might be hard to change his way).
On the roof top, Vinz talks to the other senior students about being able to fight off 20 guys at once. They all laugh at him and say that it is only in movies!
Vinz says to Sifu Lui, “I wanna to be as awesome as you”. Lui Sifu replies, “Of course you can, you just need to practice hard”.
When looking at the old black and white pictures, Vinz asks, “If Bruce Lee was not dead back then, would you have defeated him”? Sifu replies, “I hadn’t yet learned Wing Chun”.
After explaining the center line principle and the reason for the narrow WC stance, they go to eat a vegetarian meal. Vinz asks, how has your martial arts differed before and after you became a vegetarian? “I was more aggressive before but now I am calmer. My skills improved too”. Vinz asked, “How so”? “Because Wing Chun is every bit about using your mind as well as your body/strength”. “OK, then I will give this a try”. Vinz seem skeptical about a vegetarian diet.
After explaining Chi Sau, they move to Foshan China, the home town of Ip Man and several Wing chun masters. They visit Yip Man Hall and meet Yip man’s 2nd son. Ip Ching. Most of the exhibits were donated by him. They show Dr Leung Jan’s medical books.

The Pole form. The pole form is an advance form and only taught to students who master the empty hand forms. The Wing Chun empty hand forms have the narrow stance but the pole form uses the wide stance so the Pole form must not have originally been designed into Wing Chun. They use an re-enactment to show how Abbott JeeShin met a red junk pole man. Yip Ching was impressed with how quickly Vinz picked things up.
They visit the Foshan branch of the famous Jing Wu Athletic Association. The founder was Fo Yuanjia. Vinz was blown away that Jing Wu really exists. Sifu Leung is the current chairman of the Foshan Jing Wu school. His student is Canadian woman named Candice. Candice was already trained in WC before she came to Foshan to learn WC exclusively. She teaches at night to finance her WC education and trains every morning on the wooden dummy at home and then continues her training in the afternoon at the studio. Sifu Leung is very impressed with his foreign students because they really want to learn and put their time into it.
Vinz has already finished half of his 3 week training period and his sifu has arranged to have a chi sau sparing match with Vinz after the end of his daily routine training program. Vinz thinks it is “hell” but is inspired to do his best. His teacher is impressed at how well Vinz is learning. From the chi sau sparing match, the Sifu thinks Vinz tries to “win” too much. “ How can you win if you cannot allow your self to lose at first”? They go for night time snack. Vinz doesn’t want to eat congee (which I guess because it is mainly soupy rice). They tease him. Eat, because you need to recharge your batteries and it will help replenish your kungfu energy. If you are not hungry then you did not train hard enough. Trust your sifu. While they are eating Vinz asks sifu, “Is there any secret techniques that you have not taught me”?... they cut to the intro of Biu Tze in the next chapter.

The actors demonstrate that Wing Chun is suited to fighting in the narrow lanes and alleys that are typical of Guangdong province towns. Throughout the past 200 years, WC has been continuously improved (evolved).
They introduce Christopher Collins. He is an ex US marine. He learned wrestling and kick boxing before learning WC. Christopher Collins teaches Wing Chun by adapting it to current world / real world situations for body guards.
Vinz is finally taught Biu Tze. Sifu explains that “thrusting fingers” is not literally hitting with your finger tips. Vinz gets his final test in a boxing ring. He fights his teacher. Sifu says he has not fought inside a ring for 29 years. Obviously my speed and stamina is not as good as when I was young but I am still better than the average person on the street.
Vinz feels a lot of pressure. Very nervous. “ I did not expect to have to fight my own sifu” I am trying hard not to use my karate and instead use my new wing chun skills. It is hard. I cannot hit with the same power I was used to with karate.
Sifu says Vinz’s straight punches can be considered to be fairly good for the short amount of time Vinz has learned but if I launch non-stop string of WC attacks, Vinz is stunned. I want Vinz to feels what it is like to be under this kind of pressure and to help him feel where chi-sau comes into use (or is useful)
In the second round, sifu wants Vinz to use his front kicks. At the same time, sifu’s commentary is he often sees Wing Chun practitioners are not able to use Chi-sau in actual fighting. When real fighting comes, they forget to use their chi sau skills.
Then the film cuts to replay what Vinz said before his started his WC lessons “People say Chinese martial arts are only good to look at but useless for actual fighting. I want to experience the power of Wing Chun first hand”. After the match Vinz thanks his teacher for his less than 20 days lesson in WC. His teacher said Vinz learned a lot and due to time constraints some things were a bit rushed unfortunately. Nevertheless, he felt Vinz did well.
